Larry Miller Level Five Ale Recipe

Yield: 5 gallons

Total boiling time: 60 minutes

Primary fermentation: 2 weeks

Secondary fermentation: none

7 lbs. light malt extract

1 oz Cascade hops

1 oz Hallertau hops

Boil water

Add LME

Bring water back to boil

Add 1 oz cascade hops

Simmer for 30 mins

Add 1/4 oz Hallertau hops

Simmer for 10 mins

Add 1/4 oz Hallertau hops

Simmer for 10 mins

Add 1/4 oz Hallertau hops

Simmer for 10 mins

Add last 1/4 oz Hallertau hops at last one minute of boil

Cool. Transfer to primary fermenter and pitch with dry ale yeast. Ferment for 14 days. Prime with 3/4 cup corn sugar and bottle.

    Why is the mailbox so complicated, with the swingy-thingy chute and all the warnings printed on it? I feel it’s going to bite me before the letter drops. And it could be so simple, a big bin with a slot.

    Why the swingy-thingy? Is that to prevent an industrious degenerate from stealing mail with a fishing rod? That’s a little paranoid.

Just wondering if there might have a possible guest pop in every now and then, like a winemaker or a liquor distributor since we’re all having cocktails while listening to this….

    Ha! You have an astute ear. Shinny is to climb up, shimmy is more to wobble or cavort. Larry may have meant shinny up the lamppost, or he may have meant shimmying once you’re up there. Either one is a funny mental picture, in my humble opinion.

    Properly seasoned cast iron pans will cook eggs and rinse clean with hot water. Seriously. Instead of getting teflon flakes in your food, you get trace elements of iron.

    I rarely do a full five gallon boil. I’ll do 3 or 4 gallons and top it off with tap when it’s in the fermenter. Just keep everything sanitary and you’ll be in good shape. Don’t let the hardcore fussbuckets take the fun out of homebrewing — or anything else! — Jeff

    Wow, Jeff, you just said something I haven’t heard in many years. “Fussbucket!” I think the last time I heard it, my grandmother was the source, and she was calling my little sister one for being, well, incorrigible. It was a nice way to put it, and got the job done (however briefly). I really don’t think I’ve heard anyone use it since.

    I love old words, terms, and phrases, and get such a kick out of how you guys are bringing them back into the cultural lexicon.

    And that’s just one little bitty reason I love the show. Keep up the great work!
